These waffles are crisp on the outside and chewy on the inside. We loved them with fruit just as much as with syrup!
Dry ingredients:
240g (2c) all purpose flour
30g (2 tbsp) sugar
8g (1tsp) baking powder
5g (1tsp) fine sea salt
3g (1/2 tsp) baking soda
Wet ingredients:
4 tbsp finely ground flax
3/4 c water
1/3 c vegan yogurt
1 can coconut milk
1 tsp vanilla extract
6 tbsp melted vegan butter
Combine all dry ingredients in a large bowl and whisk well to combine.
In another bowl, combine flax and water. Whisk vigorously (as though whipping egg). Add all other wet ingredients and whisk again until well combined.
Add wet ingredients to dry and fold gently until combined. Cook till crisp on the outside (they will be brown).
Keep them in a low oven until ready to serve. Enjoy!
